Hey, I'm playing this right now too. I'm at level 40, with expert at all but 4 of the earlier levels.
I think the trick is COMBOS COMBOS COMBOS. Make sure you do at the least 2 of each action in a row. Make multiple seat colours as much as possible. Make people wait a bit. It won't matter. But make sure you don't lose any tables.
It's almost a puzzle game. There is an optimal way to do a level. Play around. Know your customers...
Hope you can beat it!
Edit: Oh yeah, and don't forget not to clean tables when you see the "closed" sign. You want as many bonus points as possible at the end by doing one big clean up.
