Because the pressure from the carbon dioxide builds up and will blow off the tops. On their side it will only rise to the side of the more solid bottle.

Laying the bottles on their sides would keep the cap seals wet and trap any carbon dioxide (needed for carbonation) preventing any from leaking out.

Home brewed bottles are put on the sde to prevent the corks from drying out. Then they would contract and blow out.

i think to keep the flavored syrup from collecting on the bottom, but just a guess

maybe something to do with foam?
