From one of the episodes it is revealed that she was born in August 1987, but I don't know the date, sorry.

She turns 18 sometime between the end of Season 1 and the start of season 2, which places her birthday sometime in the summer. Since season 2 begins in 2005, the birthyear is 1987. According to creator Rob Thomas, Veronica's birthday is sometime in August.

don't know about veronica mars, but the actress who plays her was born July 18, 1980.
