I had 512mb in mine and i had much the same problem as you so i upgraded my comp with another 512mb chip and now it runs like a dream...its not just itunes either, everything is so much faster i wish i'd done it months ago.

It's your computer. When you are opening new applications those take priority, or if they working on something they will usually be taken care of first. It's a matter not enough RAM or a slower processor.

Try a defragmentation.
Click "Start", "All Programs", "Accessories", "System Tools" then finally "Disk Defragmenter."
If you've never done this before, it could take quite some time. Some people have to let it run over-night the first time they do it.
