2 reasons - firstly, she's the head of the order in the convent.
Secondly, her act of caring for the homeless, the poor & the destitute is not unlike that of a mother taking care of her children.

If Jesus said that his male followers were not to be called "Father" in a religious sense, isn't it wrong to call females "Mother"?
