not only when her parents are around but just other people too. like when i am talking to her just me and her she is just this loving sweet caring woman but when she is around other people she doesnt want me to touch her or tell her i love her and when i do she just responds with a "me too." it gets kinda frustrating, i mean i try to understand where she is coming from on this one but i just dont get it maybe someone else can help me understand.

it could be because she has respect for her parents,
when i met my huband i found it hard for him to tell me he loves me when my parents were round,but now i dont care it may well pass when you get wed as you kiss in church in front of loads of people dont worry she loves you

Some people are really uncomfortable with PDA's (Public Display of Affection)
Talk to her. Ask her if there's a reason she's uncomfy with them, or if it's just her nature. If she's aware of why, she should be telling, you being engaged and all.
Good idea to get this out of the way LONG before the wedding, however!

Why you want show to everybody you love her in very personal way. You are not husband yet. Be realistic sometimes how you behave can be read wrongly for you.
