Couple days drive if you go hwy 101, but that's not the Pacific Coast Highway. Hwy 1 is the PCH and that, with a few exceptions, hugs the coastline with its breath taking views all the way down to SF. Hwy 101 spends a lot of its pathway inland; so the views are not so great...unless you like mountains rather than the seashore.

If you really meant hwy 1, it will take more than a couple of days. First, much of that road is very crooked as it follows the coastline. You're not inclined to go very fast. And, because it does wind so much, the mileage is greater than the straighter hwy 101 or Interstate 5.

Second, you will likely want to stop to take in the views, which is why most people want to take hwy 1 in the first place. I would plan on at least 3 days; maybe four.

Using mapquest.com starting from Seattle and adding points along Route 101 until one gets to San Francisco, I found that the distance is about 910 miles. It should take about 18 hours driving.
