I too found this concept a bit difficult to understand right away, but my teacher told me this:
Think of a one mole as a dozen. A dozen is just another way to measure things, but unless you have a unit, then it doesn't make sense.
It's like saying, "I have a dozen." But we don't know what you have a dozen of, unless you specify a unit. "I have a dozen eggs."
In the same way, a mole is just another way to measure things, it's a set number of something that you must specify.
Avagadro's number (6.02 x 10^23) is the specific number of a mole, like the number 12 specifies the 'dozen'.
So an example would be:
1 mol of water molecules = 6.02 x 10^23 water molecules
