A good winter destination is Zagori,an area in the Pindus mountains in Epirus, in northwest Greece. It has an area of some 1,000 square kilometers and 45 villages known as Zagoria or the Zagorohoria, and is in the shape of an upturned equilateral triangle. The southern vertex of the triangle is the provincial capital, Yiannina (Ioannina); the south-southwest side is formed by the mountain Mitsikeli (1,810m); the Aoos river and Mt Tymphe constitute the northern side, and the east-southeast side runs along the Varda river to Mt Mavrovouni (2,100m) near Metsovo.
You will have the opportunity to see the Vikos Gorge is one of the deepest gorges in the world, second only to the Grand Canyon in Arizona.The Vikos Gorge, one of the gorges of Zagori located in the Vikos-Aoos National Park, stands out from all the others for its dimensions and for its awe-inspiring beauty. The gorge collects the waters of a number of small rivers and leads them into the Voidomatis which rises in the Gorge.The walls of the Vikos gorge, at about 1.040 m (3,120 ft) at places, are the steepest anywhere. As a natural phenomenon, it has to be seen to be believed. Over and above its grandeur, however, the Vikos Gorge is of a major scientific interest because it is in almost virgin condition and its ecosystems are many and various. This is one of the reasons for which it forms the heart of the Vikos-Aoos National Park, which is a refuge for many endangered species of animal.
Another choice is Pelion,a mountain at the southeastern part of Thessaly in central Greece,which is part of the prefecture of Magnesia (capital city: Volos) and embraces 24 villages (most significant: Portaria, Makrinitsa, Milies, Tsangarada, Zagora, Argalasti etc.)The mountains are entirely forested, with beech, oak, maple and chestnut trees. Pelion is a tourist attraction throughout the year: the mountain includes trails and sidewalks for walking within small and large beaches with sand or pebbles. Modern Pelio has twenty-four villages built with traditional Pelian architecture.
You can also go a trip in the Meteora, monasteries built on spectacular natural rock pillars. They are located in north-eastern Greece, on the edge of the Pindus Mountains and are included on the UNESCO World Heritage List.

The same places as in summer time.
Avoid the small islands as communication might be difficult but all major islands are available throughout the year.
You can also see Wintertime Greece which is not so popular, but is also magnificent.
You can visit all archaeological sites, ruines, museums, enjoy the nightlife which is always there and meet Greek people..

I travel out to Greece quite frequently during the "off season" and I would seriously avoid the smaller islands in December. It also becomes more difficult to island hop after October because the ferries and hydrofoils stop or go onto winter schedules. They can also become unpredictable due to the weather.
I would stay on the mainland and, for ease of travel, stick with Athens.
Apart from the historical sites (Acropolis, Museums, Temple of Zeus, etc) there is plenty to do in the evenings too.

If you're not in a hurry go just about anywhere you would go in the summer. Just be prepared to stay on any given island longer than you expected due to changes in the weather. Ferryboats will cancel or postpone if the seas are too rough.

I have been to Pilio in the winter and its sooooooo beautiful...but its a bit of a drive up the mountain (after Volos) so car sick people beware! There is also a ski resort there.
