First I think that you are confusing special effects with digital effects. Special effects was always a part of movies. When the would cut the movie and show it from another angle, or putting a person in a monster suit to make them look real, that is all part of special effects. It is the digital effects are new. Now to answer your question, the special effect they would use is to shoot two parts. The first would be the person falling, they would film up till they would land in the padded area. Which most people thought were matresses, but they were really boxes (which by the way, a lot of actors that do there own stunts still do it this way). Then they would film the lower area from another angle. Droping the person on a lower screen and shooting from a different angle. Then they would cut and slice together. Some production companies used film over film. Shooting the person on a nutrual background, then placing that over a filming of the area. Like in Superman (the origianl TV show)

Ask Jackie Chan! Stunt doubles or talented performers like Jackie Chan and Buster Keaton just really did it. Clever positioning of the camera can make it look even more dramatic.
