It depends on one's needs--if you're the type who wants to watch video on the iPod (or to a TV connected to the iPod), or if you primarily listen to your music in your car or home, then the larger capacity of the iPod video ("5G") will be best for you. If your idea of listening to music involves doing it while jogging or at the gym, then you'll probably want the lighter, smaller iPod nano. Within those two general types are specific models, wherein the issue is money for more data--there's the 80GB and 30GB iPod videos, and the Nano comes in 2GB, 4GB, and 8GB sizes (you can store approximately 250 songs per GB of storage).
Of course, there are other music players that aren't iPods, but the decision between models still lies basically along the same lines--there are hard-drive based players that store more and have video capabilities, but are bigger and bulkier; and there are flash-memory based players that are smaller and thinner, but have less storage space for music.
