Most people who hear these words must at least be listening to the channel in question. Otherwise they would be very unlikely to hear the words.
Perhaps you should suggest that, in future, a form of words is used such as: "You are probaby listening to the audio track of the History channel".

That's a good question. They know because there is a tiny transponder mounted in one of your teeth which relays your brain activity patterns to a mind monitoring / control room deep inside a bunker in Area 51. They're only telling you what channel you're watching as a way to identify themselves. They really don't know what channel you're watching, and when you're watching it.
