I suppose it's beacuse standing in front of a large group of people makes some people self-conscious.
They basically worry what people think about them and whether or not the audience finds them acceptable.
For the shaking bit, its a human reaction. There is some perception of danger that activates the autonomic system to some degree. This causes use to shake.

About 1 in 8 people have that problem. It is called social phobia. Simple fear of some types of social situations. Fear of an audience is a common lesser form of it.

Adrenalin is the main cause. It never really goes away. You may become more comfortable but there will always be that rush. Just learn to control the signs. Hold the corners of the paper, breath evenly, and don't shift your weight.

I have stood before an audience, but I haven't ever shaken. Yes, I was nervous, but I had my material and just kept it in my mind to get the job done. If you concentrate on what has to be done and forget about who is watching, it gets a little easier.
