create dioramas of various settings, using shoe boxes, whatever. Collect pictures and have students collect pictures of their own, from magazines, wherever. they learn more as they DO more, not just listening to you.
i remember creating a wave pool (for some class). building a tundra, whatever (i can't remember all the words).
research "hands-on-projects" or differentiated instruction and apply it to your own topic.
Good luck!

For God's sake, if you are taking the children out, do not make them, UNDER ANY CIRCUMSTANCES, take notes. It will make the experience boring, and even forgettable. I am familiar with human psychology, and am very positive that the experience will be much more memorable with the absence of "pressure," and I know that you understand very well what I mean by this word. Well, nobody's gonna really care about what they have written during the exploration afterwards, so make it fun by only displaying. I truly know the consequences of making others take notes outside of classroom, and it is more than often the growth of boredom in the field.
It depends on whether the students are elemetary or high on what kinds of project work will be assigned, right? You should be a little more specific so we may know about their desires.

Take them to a National Rifle Association meeting, so the kids can learn how killing little wabbits and Bambi's are so important to our environment. The weak ones are killed, so the strong and dominant can survive, kind of like in real life!! They can learn to hunt, pee in the woods and all sorts of natural stuff. Hope this helps, good luck!!

well i am a student. my environment teacher is always practical. dont jus go with notes books. as something of your own\. ask students about their surroundings and the actions that they would take to make the environment better.
