2 possible answers spring to mind, that would be quite popular if it was put in a survey:
- unicorn, for strictly romantic reasons
- tyranosaurs, because most people would like to see one alive
After that, if there is no real limit, about about very smart dogs, capable of talking? Or vegetarian tigers (so people can have them as pet)?
The late Douglas Adams, in the Hitchhiker's Guide to the Galaxy, came up with an animal that wanted to be eaten, and was capable of saying so, so no one would have issues about eating them (the effect on Arthur Dent was to put him off so much that he insisted on eating a salad -- that is in the Restaurant at the End of the Universe segment); but of course, why stop there?
The babelfish may prove too delicate to engineer, so how about an oyster that filers sea water and concentrate some specific minerals, like gold for instance, in their shells?
Or how about a cow that naturally produces the proper stuff to directly give milk chocolate?
Mosquito that delivers vaccine?
Sheep with naturally dyed wool?

I would engineer a Speaking Dog, that way I could really have a best friend, and talk to him too. I would also love an Elephant that can make beer and blow it out it's trunk. Most likely, I would engineer a man with the enhanced abilities such as a flying man, or a man who has chromatorphores, or a bat man, who uses sonar to see.

I would design Bio-Organic weapons and set up a real "umbrella corporation". And steal all of Capcom's ideas as well XD
