My baby is also 8 months. She WILL NOT take anything on a spoon. She's not much interested in food. I'm not very worried, I've laid off the baby food and am trying a new approach. Baby directed feeding. Here's a link, it really makes sence. Hope this helps. It's important to remember that food for the first year is for practice, not nutrition. Breastmilk or formula should be the main food source for the first year. (75% of their calories)

you can give her some table foods that are mashed with a fork in addition to pureed foods. Mash a favorite vegetable or meat with a fork. Use a potato masher for foods like bananas, cooked apples, winter squash, white or sweet potatoes, and carrots. Make sure the food has no big lumps, pieces of skin, seeds or strings. Don't give honey Don't give baby chunky foods such as corn, nuts, popcorn, grapes and round pieces of hot dog. These foods are hard for baby to eat and can cause choking.

By eight months, your baby should be eating what you eat and breast milk or formula should be a supplement to this diet.A lot of fruits and veggies with an appropriate amount of meats.Poultry is easier to chew than steak.Be sure to cut the meat into bite-sized pieces.

Well I don't know what all you are feeding him...
But with my baby, her butt was eating stuff with no teeth and gummin it just fine.. But i'll give you some ideas....
Mashed potatoes
Biter Biscuits
Chicken Nuggets
Just try to give him something that he can hold that he won't choke on and he can handle that's simple... Give him mainly soft solids... Like noodles.. Hope that helps.

Gerber Graduate meals are great. They have these little pasta pick-up raviolis that my daughter loved at that age. Kids usually have fun with plain rice or shredded cheese also. Diced ham and chicken are usually easy meats for them to chew. My daughter only had about two teeth at that age also but their little gums are very hard.
