Knock on it with two fingers if it makes a thud youre good to go. Also it should be firm to touch and should smell leafy.

Thump it with your knuckles....the deeper the sound, the more ripe it is. It should sound low.

forget all that tapping and such,, you have to have a lot of experience in that,, all you need to do is look on the bottom,, it should be yellow to white!!
