Yes there are some you are required to see. And there are other rides you are required to ride. I don't have either list with me. Good Luck! :)

Go now to the bookstore and buy "The Unofficial Guide to Walt Disney World 2007" by Bob Sehlinger. He lists the "must see" attractions for each park. There are reviews of every ride. The book is your best bet to make sure you don't miss a thing. Ask park employees what their favorite rides are. Anything with a "fast pass" is worth seeing. The book will tell you all about the fast pass system which is a great timesaver.
Above is some misinformation: The Matterhorn bobsled is only at Disneyland in CA, so it the Indiana Jones ride. There is an Indian Jones show (not ride) in FL.
Magic Kingdom= Space, Splash and Big Thunder Mountians. Mickeys Phillharmagic, Pirates of the Carribean, Haunted Mansion, Wishes Fireworks, If you have a fast food meal, in Tomorrowland go to Cosmic Ray's Starlight Cafe (there is entertainment.)Skip the Hall of Presidents.
Epcot= Mission Space, Soarin', Test Track, Honey I Shrunk the Audience, Illuminations fireworks.
Animal Kingdom=Everest, Killamanjaro Safari, Kali River Rapids (bring cheap dollar store rain ponchos that you can wear and give away after you ride), Countdown to Extinction (earsplittingly loud at the end)
MGM Studios=Star Tours, Tower of Terror, Rock and Rollercoaster, Lights, Motor's...stunt show. Backlot Tour, Muppets 3D, Indiana Jones Stunt Spectacular, Fantasmic! nighttime fireworks and other goodies show. If you have too much money, the food at The Brown Derby is awsome.
Buy and study the book!

Magic Kingdom
Snow White's Scary Adventure
Big Thunder Mountain Railroad (Mine Cars roller coaster)
Space Mountain (Indoor roller coaster in the dark.)
Jungle Cruise (I have just heard that they are thinking of making a movie.)
Haunted Mansion (A lot of people like it even though I don't.)
Splash Mountain (Partial indoor flume ride.)
Country Bears Jamboree (Cool and funny bears sing)
Mickey's Fillmore Magic (A lot of people really like this show.)
Pirate's of the Carribean (A movie came out, and I suspect that you would love to go on this ride.)
Animal Kingdom
It's Tough to be a Bug (This is kind of scary though. Bugs can freak you out.) It's in the big tree.
Expedition Everest (I think you should just try it even though it might not be the greatest ride in the world. It's not that rough, and you might like it even though I don't.)
Dinosaur (This is the gem of the park. However, if you scare easily, I wouldn't ride it.)
Kilmargio Safaris (This is a ride in which you see all the wild life in Africa. There's nothing much more to say.)
Pochantos (This is a show, and it's that bad for the kids to see if you have any. I don't know??)
Disney Studios or MGM
Great Movie Ride (This ride can freak little children out as it has been before. You travel in a cruiser on a track, and see past movies.
Tower of Terror (This is a freefall drop ride experience indoors. You drop, and go up multiple times.)
Rockin' Roller Coaster (It's a roller coaster that launches at high speeds. I think it's boring, but whatever.)
Indiana Jones Stunt Show (This is just a classic. If you have any idea what the movie is, you should see this.)
Motorcyclyes, and blah.. (This is a brand new show in which cars are in stunts, and so on.)
Little Mermaid (You have to see the Little Mermaid in person. Wow!!)
Star Tours (This is a motion simulator ride.)
And yes, there are more rides than I'm telling you just in case you thought I'm telling every single ride to go on.
EPCOT
Spaceship Earth (This is the big ball, and it has a ride in it that goes on a track. It's air conditioned, and it smells good in there.)
Test Track (This is the best ride at this park. You are a dummy test driver. You go up hills, go on a racetrack, and more.)
Soarin (People just like this ride. I think it's boring. You sit in a seat above a screen, and watch it.)
Honey I shrunk the Audience (You wear glasses, and watch a movie screen. You feel really small when looking at people that are huge. It's fun.)
Imagination with Figment (I love this dragon. He's so cool. Enjoy the ride.)
Norway (This boat ride is quite fun, but make sure to skip the movie.
America Pavillion show (This is about America becoming America. There are aminatronics. The problem is that some people think that this is boring. You are just sitting watching these animatronics. So, you decide.
Hope you enjoy Disney World. I have heard that Space Mountain at the Magic Kingdom is going to get changes. This might mean the ride inside might be different the next time you come back. So, if you really like Space Mountain the way it is now (the ride), I should say that you should go on it as many times as possible.
Someone else has said "Matterhorn Bobsleds", and "Indiana Jones Dark Ride." These are at Disneyland, and the Disneyworld. It's an honest mistake. Those are good if you do go to California whenever though.

Soarin', Tower of Terror, Mission:Space, Space Mountain, Rock 'n' Roller Coaster, Splash Mountain, Dinosaur!
Soarin', unlike most of the other on my list, isn't fast or anything. It is so beautiful and amazing, though. You have to get there right when the park opens and get fast passes to this.
There are so many more, though! I suggest going on every ride and walking every inch of the park, but that is pretty much impossible to do unless you have a couple of days for each park. I love Disney World! The happiest place on earth! :-)

Pirates of the Caribbean is a must. It's not fast, or thrilling, but it's awesome. Especially if you have kids. They'll enjoy it. Some parts may be scary but for the most part it's great.
Splash Mountain is one of my all time favorites.
Zippidy Doo Dah, Zippidy Yay, My ol' my oh what a wonderful day!
Big Thunder is also a great ride. Not too fast, but fast enough to make you scream like a school girl!

Oh wow, there are so many...I visited there in March, and my personal favorite was the flight simulator. Where you take off into outer space, and the Tower of Terror was a really cool ride and Mt. Everest was awesome as well.
