Do you love to serve people? Is the monetary reward going to be satisfactory. Who is going to provide insurance for you? Are you asking as an owner or a future employee? If your business accidentally gives a group of people food poisoning, who is going to handle the lawsuit? If you or other employees are injured (burned/ hurt in a fall) during the job, who is going to handle the claim? Who is responsible for paying workers comp.? What if the customer's check bounces after providing catering for 100 people? Are the employees dependable? If all the employees suddenly go get better jobs right before a huge catered wedding, do you have a very large family that can cover the shifts? Will you be using a temp. service for employees? These are just a few questions to consider.

I had a friend who was a caterer for a while. She said the number one mistake was underpricing. Because she was anxious to get work she would offer prices that were so low she ended making very little money or even losing money. Take all your expenses into account in your pricing policy (rent, utilities, travel expenses, employees and their benefits, depreciation on equipment, etc.) and build in a buffer for contingencies (burned food, etc.).
