I can't think of any classical stuff, but a great alternative to that would be "Wish You Were Here" by Pink Floyd. Play that on a 12-string acoustic and you'll be hooked just like me.

Not classical, but Parachutes by Coldplay. Its around 45 seconds long, but its a beautiful song, entirely acoustic guitar.
