It seals the mating surfaces between two items. A common place for gaskets are in automobile engines. They can be found between the valve cover and the top of the cylinder head to keep the oil from leaking out. The gasket between the bottom of the cylinder head and the block helps with compression around the cylinders and also allows oil and coolant to flow between the head and block without mixing or leaking. There are also gaskets on the oil pan, the intake manifold, and exhaust manifolds.
Here is a simple example for you...the little piece of rubber under a coke cap...gasket.

Quite simply a gasket is placed between two metal cases and when these tighten together the gasket being made of cork squashes up and stops the oil from seeping out. The best example of this is the rocker box cover in a car which is the oblong bit on top of the engine for those that are not mechanically minded. Easy innit?

It fills the gaps between two pieces generally bolted together, and keeps things from leaking in or out. In an intake manifold, it would stop air leaks from the outside, in a water chamber it would keep the water from leaking out. That sort of thing. The biggest gasket, the head gasket, keeps the compression inside the cylinder.

The main function is to prevent leaks between to hard milled surfaces with inconsistencies, by fitting them with a soft malleable material (a gasket) that will fill the voids and compensate for those inconsistencies and still take the pressure.

a gasket seals. pressure in or out liquids or gasses. different materials for different needs. for instance a 22r engine in an old toyota truck can take a 12pack box. cut out and use it for a replacement head gasket. air intakes today use gaskets that look like fat rubberbands

having said that suppose you only want a single gasket,,and dont want to buy the whole shooting match.
you used to be able to buy a sheet of gasket card (in variuos thicknesses(forgive the spelling) and cut your own out with a pair of cutters
