yes you can .change the shocks the same way as any shock,disconnect plug under hood to air ride tuck away air lines.
you can buy replacement shocks at any parts supply store.

I suspect that the air shocks are part of an automatic leveling system. It's best to keep it functioning, wouldn't you think?

Sure can. Most likely you aren't towing anything(14 yrs old). Go to your local repair shop or if you prefer to do it yourself go to your auto parts store and say you want the conventional ones

no because these air shocks are stabilzers also . when you go around a corner at high speeds it send a signal to that side and the shock inflates to keep it level and its also a safety item.
