They should die back on there own so you don't have to do anything. In Ohio we haven't been getting down to zero most winters so they should be OK. It wouldn't hurt to put a few handfuls of bark mulch for insulation in case we do get the cold one this year.

When the perennial herbs have died down compost the wilted leaves, stalks etc.Annual herbs remove completely.Parsley can easily be frozen for cooking in winter.Before the parsley wilts chop the fresh dry leaves of parsley in blender.Fill plastic container and freeze. For use just scrape out what you need with fork, the rest put back in freezer.
