Things like; Lightening never strikes twice..but....history repeats itself. I know loads of these can you think of any?

"Penny wise, pound foolish" vs "Look after the pennies, and the pounds will look after themselves".

"Absence makes the heart grow fonder" vs "Out of sight, out of mind".

To see a black cat is lucky, but if a black cat crosses your path it brings bad luck.

And so on.

LIghtning strike / history repeating isn't a contradiction in the way it is used in everyday speech. A lightning strike is a very, very specific event. History repeating itself is much more general.

The too many cooks / many hands example isn't specific enough in how many cooks and how many hands are involved. You don't want too much help and you don't want too little either.
