Hearing is basically what you do all the time. You hear everything going around you. Hearing is basically your ear performing its function. Listening is actually paying attention to the differents sounds around you or to the conversation you might be having with someone. It means that at a later date you can most likely recollect the sound of something or what was said. Same can't be said for hearing.

Hearing is when you hear sounds, the noises people or things are making. If you listen you understand what someone is talking about, you have attention to the speaker.

Paying attention.
When you hear what the person is saying it's just to complete the purpose. Either receiving simple instructions or to pass the moment in simple conversation.
But to "listen" is to also read the unspoken words....digest and translate the spoken words to meaning.

Hearing is a physical function you are able to perform unless you suffer from physiological damage or cerebral dysfunction; on the other hand listening is a selective activity that involves reception, selection, organization and interpretation of aural stimuli.

While the two words can be used interchangeably, "listening" implies that the listener is paying strict attention to the speaker or whatever is making the sound.
