Because even though we're living in an anthropocentric era, traditionally psychologists have conceded that any other animal with signs of intelligence possesses a 'psyche' (a general vocab word, not a psych word).
For instance, Ivan Pavlov studied positive reinforcement using dogs. Currently, studies involving African Grey parrots are being used as models for teaching the learning disabled. There are many brains contained within our own, including reptilian and mammalian; it then makes sense that at least other mammals are credited with possessing a level of similar psychology.

first of all psychology doesnt only look at behaviour it covers many things. but it looks at animal behaviour as well as human behaviour because they are very similar for example many psychologists have found that they can see the same behaviour techniques when using animals in experiments as what they see when looking at human behaviour!

We are evolved from animals and we carry lot of traits from the animal behavior, so study of animal psychology helps US to understand human behavior.

I am not sure that this is an accurate definition as it studies more than behaviour but it is a behavioural definition and behavourism is one of the main streams of psychology.
Perhaps you found a definition where author does not want to delve into things not obvious - congition, emotion. instinct

Bowlby studyied geese before children. His findings were, " the gosling followed the first person whom they saw at birth and built their trust in them, whether it was their maternal mother or a human. They put their trust in that being.Same instinct as a baby.
