It's red from the flush of blood, but as to why the physiological response sends blood to the face for that emotion . . .i don't know.

Fight or flight, that is how humans react to any threatening situation. Embarassment, like anger and fright is a threatening emotion, hence the body reacts with a rush of hormones, mainly adrenaline. This is the fight trigger. The heart beats faster, thus pumping more blood, especially visible on your face, since the skin is thinner there. Thus you hear, red with anger, red with embarassment. On the other hand, the flight response shows a dip in blood pressure, hence the blood drains and person looks paler. Hence you hear yellow-faced used when it comes to cowardice.

It's all to do with the 'fright, flight or fight' response to stress. Embarrassment is stressful, therefore you release adrenalin and cortisol which in turn dilates the blood vessels, especially in the head and neck. This causes facial flushing - but it's a vicious circle because the more embarrassed you are, the more stressed you get about blushing.
