Because kids like colors.....IF candy didn't have fun colors we couldn't separate them and eat the ugly ones last. Kids like color and they like to play with their food. If you go to the Dollar Store you get knock off candy that look like M&Ms with no color. They all brown. Its their trademark and they aren't going to stop dying their candy.

For the same reason that smarties are different colours but again taste the same. In fact the chocolate M&Ms are really just the same as smarties it's only with the nut ones that you get a difference.
