Have a good business plan.Find a theme that you want and stick to it. I've worked in the industry for over twenty years and have seen rest. come and go.
Do not try to be everything to everybody.keep in mind that 3 out of every 5 rest, fail in the first year. Expect to work 90 hours plus a week especally for the first two years. talk to other rest, owners and ask them what works for them and what pifalls await you. Go to the national Restaurant Association website
and get the info there.Find a company that does menu enginering and have them help you out with the menu. Dont forget that your menu is your only selling tool because today virtually no rest. gives any value to training their sstaff.Find out where your local Sysco Foods wharehouse ships from and get them involved. There is a reason they are a 34.5 billion dollar company.
They know what they are doing.....Good luck
