Since you probably do not know (and should not know) at this point anything about your eventual area of specialization (Mesoamerica, Ancient Near East, China, etc.), you should choose a university with a great anthropology program, as well as top-notch programs in things like religious studies, Latin American studies, Asian studies, etc.
Given this, I would suggest you explore top tier liberal arts colleges known for providing opportunities for undergraduates to go on digs, like Bryn Mawr, Smith, Vassar, Haverford, Amherst, Williams, etc.
You could also consider top-tier universities like Harvard, Princeton, Yale, University of Chicago, Stanford, University of California at Berkeley, etc.
Whichever you choose, while you are in college, keep your grades up, and get to know your professors well. After all, they will be writing your grad school recommendations!
