a complete acoustic instrumental is "Crystal Ann" by Annihilator
another is "Into The Dead Sky" by At The Gates. I know these are metal bands but some metal bands have guitarists who are classically trained.

have to agree with Spanish Fly, nice tune, also on that record is a bit called Little Guitars
MetallicA have some awesome acoustic stuff, check out Fade to Black or Master of Puppets
the acoustic version of plush by STP or the whole Nirvana unplugged record, also Eric Clapton unplugged is wicked
Pearl Jam, Soul Asylum, Planet Caravan by Black Sabbath
Best one of all? The Clap by Steve Howe, on Yes' first album, called The Yes Album - I saw him open the show with it one night, he just came out on stage, sat on a stool and started playing :)

Anything by Robert Johnson, you know - the guy who went down to the crossroads in mississippi and sold his soul to the DEVIL! All his music is acoustic because it was written in the 1920's - 30's. My personal favorite is Crossroads.
