If you're talking about Sauraman and not Sauran, he was killed by Wormtongue. This is touched on in the directors cut of "Return of the King". Wormtongue felt insulted by a remark, hopped on his back, and slit his throat. They had been walking along a road like bums, starving for a few days.

He gets stabbed in the back by Grima Wormtounge and falls off Othranc tower before Legolas shots Grima. I can't remember if it's shown on the extended edition of Two Towers or Return Of The King.
