Apart from cryptography :

Most computers have a so-called "random number generator" which will churn out a series of apparently unrelated numbers on a series of calls. Of course the numbers are strictly related by a formula inside the routine, and the formula includes one large number. It turns out that if you put a prime number here, the output is much more scattered and unpredictable than if you put a composite number. So it is useful to know which numbers are prime.
