We've already made one on a poster board and it's covered in sea turtles, coral and fish but she's not happy with it. Does anyone have any good ideas?

You don't provide an age range. Ecosystems consist of the entire system, including not just the living things, but their interactions with physical environment and processes and the interdependence of living with non-living aspects of the system. So, you might want to include things like weather; sources of freshwater, nutrients and sediments feeding into the ocean, evaporation, currents, nitrogen (and other nutrient/mineral/chemical) cycles, trophic (predator/prey) cycles, and so forth. Tailor and limit according to grade level and expectations.
