Ok, If I were to add salt, what chemical/element etc would it change into?

Add pure Sodium to it,.. hee he. You will have a mini-fireworks display. Use only about 4 grams of it in a 250mL beaker so that the sparks won't be everywhere. You will end up with sodium hydroxide.
Table salt is sodium chloride: you'll only end up with salty water if that is all you combine. It will be a nice little hypertonic solution, perfect for making pickles from cucumbers.

Adding sodium chloride is NOT a chemical change because another compound will not be made and nothing will be reduced nor oxidized. Dissolving is a physical reaction. Elemental sodium (bought stored under oil, just as someone mentioned earlier) added to water, on the other hand, will definitely make a chemical reaction.

Another compound that would react chemically with water is sulfuric acid, H2SO4. After putting about 10mL of H2SO4 into 200 mL of water, you can touch the bottom of the beaker and it will be warm, eventhough both compounds started out being room temperature. Interesting, isn't it? Have fun with your experiments! And be careful.

Water is neutral pH, so you can add various things to make an acid or base solution.

you're going to get NaOH, Cl H2O and some reminant NaCl depending on the salt to water ratio of the mixture.

Sodium. Pure sodium is VERY reactive with water...so much so it has to be stored in oil to prevent contact with water.
