In terms of biology: the man is further developed in most importantly the brain. The man is able to make decisions and foresee consequences that a boy will not be able to do because his brain is not as developed and he does not have this capacity.
Men are aged at about 18+

there really is no differences becuase a boy can be mature or not and still be a boy a man can be old and have age but still act like a boy it just depends on the person personality

Like joane said, maturity, age, and responsibilty. Also experience, more knowledge gained from that experience, a lot more hard knocks, more fond memories, more heartbreaks, more lost hopes & dreams, more insults from women who don't like men, a more cautious approach to the world around himself, hopefully the love of a good woman, and often a much better appreciation of the little things in life.
