The hops and fermentation process give real ale a bitter taste, as opposed to lagers which do not. Therefore, it was nicknamed 'bitter' to distinguish it from lager.

because way back in the 12th Century, a man tasted a bit of termite doo-doo and declared the strange taste "bittermite" but in the years to pass the word was eventually shortened to "bitter".
