Although I'd highly recommend doing the typical tourist activities, here are a few select things that most tourists might not know of or take the time to explore:

Seattle Parks: http://www.cityofseattle.net/parks/
My favorites are Kerry Park (amazing view of the city), hiking at Discovery Park, the view of Lake Union/Downtown from Gasworks Park, and walking around Green Lake Park or Alki Beach.

Ferry Ride from Seattle to Bainbridge:

Tourists might do this, but usually it's locals either commuting or going to the peninsula for the weekend. Most tourists take the Argosy Cruises instead.

Neighborhoods:

Seattle is known for it's great neighborhoods, so you could easily pick a few to visit and spend the morning or afternoon there. The ones that I'd recommend would be Fremont, Queen Anne & Ballard. The other that I'd recommend if you like the eccentric would be Capitol Hill.

I'd also recommend a few day trips if you have time:
Port Townsend:

Coupeville:

Deception Pass:

Gotta do Pike Street Market and who cares if you look like a tourist.
We live in Barbados, we are white and we look like a tourist every day of the week.
Don't worry about it because you know what - no one really cares and they really are not looking at you,. They have their own stuff to think about and dont care where you are from.
You've got to have Dungenous crab - the best in the whole world!! Mmmmmm

A Starbuck's coffee cup in-hand is your secret ticket to "blending" in.
Start by visiting the original Starbuck's.
