because the sun slow cooks it instead of it being cooked really fast.
Same reason that bbq that is slow cooked over 24 hrs taste better than throwing chicken/beef in the oven with bbq sauce.
Its all in the way its cooked, faster isnt always better.

Personally I don't think it does.
NOTHING beats ole' fashion southern sweet tea!!!

Seen a guy urinate in my neighbor's sun tea one day...GAG!!!
