Distillation will get you a 90% ethanol, 10% water mixture. Water and ethanol form an azeotrope - that means that the mixture of ethanol and water will boil at a temperature in between the boiling points of the two components. The 90% ethanol is the best you will get out of that. If you let the distillation continue after the ethanol has all distilled, the vapor temperature will increase and pure water will come over.

condensing or distalation............but didnt know elderberry wine contained ethanol! and why do u want to seperate it?
