All critters need air (whatever chemical they breathe, they need it). No air, the critters (microbes, molds, what-have-you) can't grow and eat the food, spoiling it.

well, canned foods have to be vacuum packed due to bacterial growth in the air and the food. by vacuum packing foods it not only stops bacteria from entering but it also stops growth of bacteria already present in the foods.

Vacuum helps with preservation and sterility of the goods. If theirs air and light in the jar then who knows what will try and grow in there, lol.
