The main components of grapefruits are:

Water
Sugars
Tartaric Acid
Tannins
Anthocyanins

So, the main quality analysis you can perform on grapes are:

1) Quatification of total tannins
2) Quantification of total anthocyanins
3) Brix grades
4) %Acidity (as tartaric acid)
5) pH
