Actually, we don't all smell the same. Sciencists stumbled across this discovery when they were performing a test on odours emitted by people and found that some of their smellers could not detect some smells.
They found that genetics has a role to play in dectecting specific smells. There are about 50 genes that affect the way we smell. Those with a specific gene could smell a specific chemical, and those without that gene could not.
Most other smells are detected by people generally the same, though.

No, most likely two people will process the same smell differently. This is because the olfactory system is linked to the limbic system of the brain (this is where we "interpret" what we smell). It's a very complicated system that neuroscientists still do not fully understand. Olfactory cells located in the nasal cavity make connections with the olfactory bulbs in the central nervous system (the olfactory bulb lies on the floor of the front of our brain, conveniently close to our nasal cavities). Cells in the olfactory bulb then transmit information to various areas of our brain. Some of these areas are responsible for learned fear, memory, and other higher-order processes. This is the reason why a particular smell will remind us of different moments we have experienced in the past. This is also why people in different cultures enjoy different smells (one might find a smell absolutely repulsive while another thinks just the opposite).

its probably like colors... where some people cant smell some things that other can, and some people thing two things smell similar that another person doesnt. and everyone smells things slightly differently depending on them, and what they are currently used to....
