We have another paper due next Saturday on the 14th and I am going to write his paper for him, would that be a good way to say thank you? or should do something more

my husband wrote a college paper for so I could work all the extra hrs I have to at work

yeah it should be,

and after just say you appreciate him helping you out when you needed it and that your there to support him when he needs you most too..

give him a spa night. Candle light , foot and back massage with warming gel... the works.Have fun. You need to do your own papers. Grandma.

Ask him if he wants you to write it for him if so ok but then fix him a nice candle light dinner and on his napkin write in bold red letters THANK YOU I LOVE YOU.

Although that is not really appropiate I can understand your reasoning with time being a factor. A regular "thank you" should sufice here.
