I own a '94 Pontiac Grand Prix SE. Sometimes when I start my car, it will sputter out if I don't apply some gas to it initially. Then, once I do restart it, the acceleration meter goes really high while in park and won't come back down until I put it in drive or reverse (holding the brake down, of course).

The Idle air control valve (IAC) could be the problem. They get carboned up and start to stick and won't open or close properly. Also check for vacuum leaks under the hood.
A lean running engine will speed up faster than one that isn't lean. Low fuel pressure can cause this.
The engine stumbling when it's cold could be a leaking injector or a valve seal leaking oil onto a spark plug which quickly burns off after the engine is started. This will also cause a fluctuation in idle speed. Check the plugs for oil deposits and run some Berryman's B-12 through the fuel system to clean the injectors and see how that works. There are other things that can cause that problem, such as throttle position sensor, fuel pressure regulator and sticking throttle cable, EGR valve not working properly, etc.
If all this fails, take it to a qualified tech and have a computer scan run on it. Hope this helps.

WTF is the acceleration meter? If it truely was an acceleration meter, wouldn't it show zero if you were standing still? Could this guage really be the RPM's?
I think you have a bad throttle position indicator or idle solenoid. Take it to a shop to have that confirmed.

Get the throttle cable checked or look at it your self. Dies when started might be idle control. 13 year old car might need a little work.

Get your fule filter checked,also the throttle at the carb maybe getting stuck

There's a small valve at the air filter that needs to be changed

Sounds like you have a problem with the "choke." Take it to someone who can fix it. It is usually easy to do.
