You are supposed to button the middle button. That's not just my opinion. All the fashion "rules" from Emily Post to GQ to Esquire all say that if you are only going to button one, it should be the middle. But you should really button the top two buttons if you aren't going to button all three.
For two button suits, it's the top button.

I have to answer the second button. If you button the first button, you'll look like a dork. If you button the third button, you'll look like a really big dork. You don't want to button all three buttons, unless you're trying to look very professional. If you're just going out to a club or a party, then button the second button. Trust me, not only will you look cool and sexy, but you'll also look like you know how to dress yourself.
(Try on some jeans, a nice dress shirt, and a jacket (with only the second button buttoned) and chicks will be all over you!)

In a three-button suit, all but the bottom button can be done up, but if one it is the middle one, if two it is the middle and top ones.
