Same reason your bathroom stinks after you dropped the big one. Only difference is you can flush yours. The baby however has to carry the luggage til someone takes it away.

Chemical reaction. Pee and poops meets fabric (or plastic/gel) and air. Stink results.

Of course, there are degrees of stink. Breastfed babies' pee and poop doesn't smell like much at all as long as you change them in a timely manner. Formula smells nasty going in and worse coming out. Once babies start solids, their pee and poop starts to smell more like an adult's -- like ammonia and, well, poop.
