According to crystal structure studies, four of the five water molecules are associated with the Copper ion as:

[Cu(H2O)4]2+

with the oxygen atoms in the water closest to the metal ion. It is this structure which gives the crystals the bright blue color.

The remaining water molecule is associated between the Copper and the Sulfate groups, with the Hydrogen atoms of the water very close to two of the Oxygens on the Sulfur (probably the two with the negative charges). This is usually called "hydrogen bonding."
