Demeter is the Greek goddess of plenty. She bestows her bounty upon the earth and causes things to grow and prosper.
Her Roman name is Ceres, and the largest asteroid in the asteroid belt between Mars and Jupiter is named after her.
The previously referenced myth about her daughter Persephone (or Proserpina) being kidnapped by Hades is substantially correct, except she ate six pomegranate seeds, not three. Because she ate the food of the underworld, Persephone would have been forced to stay there forever. However, Demeter went to Zeus and told him what had happened and he ruled that Persephone would only have to spend six months of every year ion the underworld, one month for each seed she ate. When Persephone goes to the underworld, Demeter withdraws from the earth, causing fall then winter. When Persephone returns, Demeter returns to earth and we experience spring and summer.

Dêmêtêr (or Demetra) /də'miː.tɚ/ (Greek: Δημήτηρ, "mother-earth" or perhaps "distribution-mother", perhaps from the noun of the Indo-European mother-earth *dheghom *mater) is the Greek goddess of agriculture, the pure nourisher of youth and the green earth, the health-giving cycle of life and death, and preserver of marriage and the sacred law. She is invoked as the "bringer of seasons" in the Homeric hymn, a subtle sign that she was worshiped long before the Olympians arrived. The Homeric Hymn to Demeter has been dated to sometime around the Seventh Century BC. She and her daughter Persephone were the central figures of the Eleusinian Mysteries that also predated the Olympian pantheon.

The Roman equivalent is Ceres.

Demeter is easily confused with Gaia or Rhea, and with Cybele. The goddess's epithets reveal the span of her functions in Greek life. Demeter and Kore (known also as Persephone) ("the maiden") are usually invoked as to theo ('"The Two Goddesses"), and they appear in that form in Linear B graffiti at Mycenaean Pylos in pre-classical times. A connection with the goddess-cults of Minoan Crete is quite possible.

According to the Athenian rhetorician Isocrates, the greatest gifts which Demeter gave were cereal (thus the Latin name for Ceres; also known as corn to the British) which made man different from wild animals, and the Mysteries which give man higher hopes in this life and the afterlife.

Demeter (pronounced dem-et-er, not de-meet-er) is the goddess of agriculture. Her daughter, Persephone was kidnapped by Hades, lord of the underworld, while she was out picking flowers. When Demeter couldn't find her daughter, she grew despondent, and withdrew from ther earth, thus things began to die and wither away.

Meanwhile, in the underworld, Hades tricked Persephone into eating 3 pomegranite seeds. When the Goddess Hecate, who had witnessed the abduction, told Demeter where Persephone was, Demeter rushed to rescue her daughter. But because she had eaten fruit of the underworld, Persephone had to return to the underworld for 3 months every year. One month for each seed. For those three months, Demeter withdraws from the earth, and things die, and wither away, thus we have winter during the time Persephone is in the underworld.

There's a lot more to the myth than that, but this is the gist of it.

Definition: In Greek mythology, Demeter was a daughter of Cronus and Rhea. Demeter is usually excluded from the list of Olympians because she chose to live on earth where she served as goddess of agriculture.
