When you thik about it, there are many instruments not in an orchestra. For example, electric guitars, banjos, dulcimers, ect. What it comes down to is that different types of music are written for different instruments. Saxophones are common in Jazz music, where you will not commonly find many of the instruments in an orchestra.

It's not that they're not allowed in a symphony -- there just isn't much (or any) music written for it. Remember that the sax wasn't invented until the late 19th century, and didn't become commonly accepted until well after that.
There are a few modern composers who write for the sax, but not many. Unlike marching and concert bands that commonly feature the saxophone (which often use music arranged for that instrument set) most proper orchestras try not to deviate from the composer's instrumentation.

The saxophone was invented last century when symphonic music already existed for some time. The orchestra was formed without the saxophone, which was created by this German guy named Sax from the clarinet (he used metal instead of wood and gave the instrument the pipe shape), so composers never included musical parts for an instrument which was substituted very well by the old standard ones.

What makes you think they are not allowed? If a musical peice requires it, it will be represented. There simply isn't a great deal of symphonic music written for saxophones. There is some. Saxs are more effectively utilized in a smaller venue in jazz.
Duke Ellington wrote some symphonic peices utilizing saxophones. As did Gershwin.
